Food from Marcus - How did it start?

At a time when I could barely tell a sauté pan from a soup pot, I jumped headlong into gastronomic recklessness. At just 21 years old, I opened my own restaurant in Sweden, a brave pioneer with ambitions that exceeded my culinary skills. But while my early dishes may not have been Michelin star material, I quickly grew into the role and created a place where food and passion unite.
When I returned to Oslo, the journey began to take shape in a more complex way. I trod through roles as head chef, canteen manager, and even as conductor of the chaos in a large kitchen. I not only juggled knives and pots, but also logistics, the staff and the challenges that come with a hectic restaurant routine.
To spice things up further, I threw myself into sales and marketing. I managed an army of salespeople, a motley assembly that required not only my skill in cooking, but also my skills as a motivator, leader and problem solver. Here I became a culinary general, managing a team of over 80, and learned the art of leading, communicating and handling everything from ups and downs.

In pursuit of personal and culinary development, I donned the hat of private chef. What started as small intimate dinners quickly developed into an exclusive service as demand grew. A wise customer suggested giving my culinary calling a home of its own, and Mat fra Marcus was born - a name that made me smile, because yes, I'm the one who cooks, and yes, it's fun!
Over time, Mat fra Marcus became not just a food destination, but a full-fledged catering and event business. My small kitchen became a huge culinary powerhouse, and my intimate staff grew into a competent team that could handle everything from fine dining to epic events.

But as in all good taste experiences, the need for a partner in the kitchen became clear. I found my culinary soulmate, a chef who could balance flavors, responsibility and growth. Thus began the next chapter in my gastronomic journey - Happy Catering. A mixture of culinary mastery, teamwork and a good dose of laughter.
